Chocolate Marquise, A secret 5star chef's recipe.

chocolate marquise (egg-less)
ingredients:
dark chocolate (53%)      200 gm
unsalted butter                 150gm
coco powder                   30gm
castor sugar                     36gm
cream (whipping )            200gm
method : 1. melt dark chocolate keep aside
2. mix butter and sugar cream it properly
3. add melted chocolate and fold coco powder in it
4. whip cream till soft pick and fold it in to remaining mixture.

ingredients:
dark chocolate (53%)      170 gm
unsalted butter                 150gm
coco powder                    30gm
egg                                    2no
egg yolk                            70gm
castor sugar                      36gm
gelatin                                5gm
cream (whipping )              200gm
method : 1. melt dark chocolate , butter together keep aside .
2. mix egg and egg yolk together in a machine mixing bowl  keep machine on with whisk attachment .
3.cook sugar till 116c and pour in machine bowl ,once  the temperature drop down to 35 c.
4.pour  melted chocolate and butter in it.
5. bloom gelatin in cold water ,melt it on a double boiler and fold it in to chocolate mix
6. fold coco powder by using cut and fold method.
7. whip cream till soft  pick and fold it in to mix.
8.set it for overnight , serve it cold.
